In Trentino, the gastronomic tradition has historically been based on a fundamentally poor diet. In the past, meat and fish were often lacking on the tables of Trentino families, and so they developed a cuisine mainly based on foods that the territory could offer them, such as flour, potatoes and vegetables. In some cases, thanks to home farming, there was the possibility of finding meat, cold cuts and cheese on the table.
Despite this, our region is able to offer a variety of products that will pleasantly surprise your palate: from Vézzena cheese to polenta, from fragrant speck to carne salada, delicious mushrooms, Cimbrian cuisine, strudel, zelten... ending with pure mountain honey to which a museum is even dedicated (see article here).
If we were to delve into all the different productions within the small communities scattered throughout Trentino, we would discover a vast variety of gastronomic products, each with unique characteristics and flavours.
In this article, we thought we would list and try to tell you what you can find on the Alpe Cimbra and perhaps take home with a bit of luck - because almost all products are not always available given the small quantities - on your return trip from holiday.
Cheeses
Cheeses are produced throughout the Alpe Cimbra.
Fattoria Lenzi produces various types of cheese: Formaggio Dolce, Mezzano, Caciotta fresca and many others. At our restaurant you can try grilled Lavarone cheese served with polenta and wild mushrooms.
At Maso Guez you can totally immerse yourself in the charm of the ancient traditions of these lands. Here, they breed a flock of goats with passion: the milky Camosciata goat of the Alps, the indigenous and wonderful Bionda dell'Adamello and the ever-present and friendly dwarf Tibetan goat. The family is engaged in the production of goat specialities and fresh eggs. It is also possible to visit the farm, which offers the possibility of an educational farm for children.
The Sotto al Croz farm is engaged in milk production and animal husbandry. Alongside the farming activity, with the mowing of meadows and the grazing of young animals, educational farm tours are organised for families, schools and children.
Among the ‘green’ activities offered to our guests is a visit to the farm.
Maso Engher: Their sixty cows stay during the winter at the barn next to the farm in Costa di Folgaria, while from June to September they move to the alpine pasture in Malga Vallorsara.
Azienda agricola Tullia Corradi: A livestock farm, it breeds dairy goats. It is possible to buy cheese at the small farm shop.

Other products
We too occasionally like to pair a cheese with a jam at the end of a meal, proposing it as a dessert. The land and nature provide the opportunity to create perfect combinations.
Vattaro Fruit: The Vattaro Fruit farm is based on the Vigolana plateau and was founded by three young people with a passion for agriculture, but with an eye on environmental sustainability and the enhancement of their territory. One of their missions is to enhance the typical fruit of the Vigolana plateau: pears, through organic farming and the recovery of old varieties. Useful links for contacts
Other interesting products are: the herbal teas and gourmet creams of the Leprotto Bisestile, the small fruits of Alp Berries, Il peperoncino Trentino, the products of the La Fonte farm, and the products of Lidia Piffer, who grows medicinal and aromatic plants, produces cosmetics with herbal extracts, scented sachets and herbal teas.

Beekeeping is well established here: one can find small productions such as those of Daniela Wanderlust, Chiara Penner who produces honey in Lavarone with her small company. Finally, not far from the hotel, there is a museum dedicated to the world of bees. (read the article here)
Many of the producers listed here are part of the Slow Food Community for the agri-cultural development of the Cimbrian highlands, in which our hotel has also taken part. We are a group of farmers, breeders, restaurateurs and representatives of civil society: we have joined together in a Slow Food Community to bring the mountains, the problem of depopulation and the need to give young people in the valleys and the Cimbri Highlands a future in work. We are actively committed to the valorisation of the area through the defence of biodiversity and ecosystems, with the aim of fostering community spirit to promote the local economy and keep it alive.
In the summer, the community also organises the highland market in the various villages of the Alpe Cimbra, where it is possible to meet the producers and buy their delicacies, which are derived solely from our unique territory.
